The History

Fabián Fernández and his journey through Spain from Castile to Santillana del Mar, more than 100 years ago, is the origin of a family business and four generations dedicated to the restaurant trade. "El Pasaje", a traditional bar-shop, was established as the cornerstone of his life project.

His daughters, Pina and Julia (Las Pinas), took over the business. With hard work and dedication, they developed their father's legacy over half a century, while Carlos grew up, Fabián's grandson and the person responsible for the transformation years later, when a new stage began under the name of "Bodega Los Nobles" restaurant.

Belén, Fabián's great-granddaughter brought up within the walls of the premises, continues with the venture. The fourth generation of the family maintains the essence of the hard work and tradition, combining the old and the new, and adding its own hallmark: Good taste and innovation. Fabián, Pina, Julia, Carlos and Belén are "El Pasaje de los Nobles".

The intention:
Love, dedication and humility are what drive us to imbue every dish we serve with our essence: Freshness, tradition and enthusiasm.

The cuisine:
Our cuisine arises and is sustained by tradition but with a touch of the contemporary, a legacy of our chef Ernesto Domínguez Linares "Tin", whose profession was his great passion. He taught us how to cook with the utmost respect for the raw materials. That is why we always ensure that our products, whether from the land or the sea, are seasonal, organic and local. Thus, our permanent offer alternates with off-menu creations, only available when nature provides them.

Covid-19:
With the utmost safety: We have updated our working protocols and implemented all the necessary hygienic and sanitary measures to guarantee the safety of both you and our team, so that all you have to do is relax and enjoy your visit to the restaurant.
